Chocolate Chip Cupcakes with Chocolate Mint Frosting !


Is there a more perfect combo than peppermint and chocolate?

I remember going to Olive Garden when I was little and looking forward to the free chocolate Andes Mint type candy they brought with the check.

So I just had to make a cupcake based off of this fond memory.


All you need for these babies are:
 A Chocolate Cake Box (easy) 
Chocolate Chips, 
Andes Mints,
and some frosting (recipe below)



Make your cake according to the box directions. 


Add a cup of chocolate chips into the batter for extra chocolate!


Butter your muffin pan. Bake as directed.


For the Frosting:
1 stick butter, a little colder than room temperature
1/3 cup cocoa
3 cups powdered sugar
1/3 cup milk
1 teaspoon peppermint extract


Add all the ingredients in (adding the powdered sugar gradually) and whip until all the butter is combined (and there are no lumps!) 


Allow the cupcakes to cool completely after baking.


Try to work with the frosting when it is colder rather than warmish and room temprature.


Make a mound of frosting on your cupcake.


So pretty! Now drizzle with melted chocolate and garnish with your Andes Mints.


These are AMAZING when you serve them cold.



Nothing beats peppermint and chocolate when it comes to the perfect food couple.
