Game Day Hot Wings

It's Football Season again- in our house that means it's Hot Wing Season too! 
 

I had never fried a chicken until my husband told me how much he loves fried hot wings. So, because I love him so much I gave it a try! These are a huge favorite at our place and are the perfect Game Day Food.


Don't let them intimidate you!

I like to use Chicken Thighs- they are more meaty than wings, and a lot cheaper (like $5 per bag instead of $9.)

Here's the Recipe:
1 cup of Flour (more or less depending on how "breaded" you like your wings)
tsp. Salt
tsp. Pepper
1/2 tsp. Paprika
1/2 tsp. Garlic Powder
1 Egg
1 Cup of Milk
8 or so Chicken Thighs
Franks Original Red Hot Sauce
Oil for frying (I use Corn Oil- As long as you strain it after it's cooled off, you can store your oil in the fridge and reuse it for frying)

First, start heating up your oil on medium. Don't fill your pan too high, just enough to cover your wings 2 or 3 at a time.
 
Next, Add all your salt, pepper, paprika, and garlic powder to your flower and whisk together.

 

I'm sure you've heard of the classic "bread your chicken by shaking it in a paper bag" theory.... I'm taking a modern approach- Shake it in a Plastic Grocery Bag! :)

All you do is dip your thighs in your milk and egg mixture and then shake them in the bag with the flour mixture. This gives them the perfect breading coverage. 

 

Let them rest on a lightly floured cookie sheet.

You will know your oil is ready when you drop a piece of the dough, made by the mixture, into the pot and it bubbles. Don't have your oil on too high, because you will just burn the outside of your chicken and the inside will be raw.


Add your chicken to your oil. I do 2 at a time because my pan is small-ish. You don't want to over crowd them because then they will just be mushy.

 You should get a roaring boil! 

Since Chicken Thighs are on the thick side, I like to "pierce" mine mid way done just to make sure the inside isn't raw.


They should be a golden brown when you take them out. Once I think they are done, I cut one in the middle to make sure there is no pink.

If you want them crispier you can always put them in the oven on broil for a minute.

Now, make sure the Red Hot isn't too hot for your taste. We drench them in it. Some people just like a drizzle of it.

I just pour it straight into the bowl & shake them up.

  
And there you are, Really Yummy, Crispy, Hot Wings (er, thighs!) 

These are really delicious cold too (we always have left overs and fight over them the next day :)
